
Steps
- Preheat the oven to 180°C (350°F).
- In a pot, cook the pasta according to package instructions until al dente, then drain.
- In the same pot, heat olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the diced zucchini and grated carrot to the pot, cooking for about 3-4 minutes until slightly softened.
- Stir in the fresh spinach and cooked pasta, mixing well.
- Season with salt, pepper, and Italian seasoning, then transfer to a baking dish.
- Sprinkle cheese evenly on top and bake for 15-20 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
