Steps
1. Preheat the oven to 180°C (350°F).
2. In a pot, cook the pasta according to package instructions until al dente, then drain.
3. In the same pot, heat olive oil over medium heat and sauté the onion and garlic until translucent.
4. Add the diced zucchini and grated carrot to the pot, cooking for about 3-4 minutes until slightly softened.
5. Stir in the fresh spinach and cooked pasta, mixing well.
6. Season with salt, pepper, and Italian seasoning, then transfer to a baking dish.
7. Sprinkle cheese evenly on top and bake for 15-20 minutes until the cheese is bubbly and golden.
8. Let it cool for a few minutes before serving.
