
Steps
- Preheat the oven to 375°F (190°C).
- Pat dry the cod fillet and season with salt and black pepper.
- Heat olive oil in an oven-safe skillet over medium heat. Add onion, garlic, and bell peppers. Sauté until softened.
- Stir in diced tomatoes, tomato paste, thyme, and oregano. Season with salt and black pepper. Cook for a few minutes until the sauce thickens slightly.
- Nestle the seasoned cod fillet into the sauce. Spoon some of the sauce over the fish.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork.
- Garnish with fresh parsley before serving.
