Cod Provençal

A classic French dish featuring tender cod fillets cooked in a flavorful Provençal sauce.

Steps

1. Preheat the oven to 375°F (190°C). 2. Pat dry the cod fillet and season with salt and black pepper. 3. Heat olive oil in an oven-safe skillet over medium heat. Add onion, garlic, and bell peppers. Sauté until softened. 4. Stir in diced tomatoes, tomato paste, thyme, and oregano. Season with salt and black pepper. Cook for a few minutes until the sauce thickens slightly. 5. Nestle the seasoned cod fillet into the sauce. Spoon some of the sauce over the fish. 6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork. 7. Garnish with fresh parsley before serving.
