Steps

1. In a bowl, mash the hard-boiled eggs with a fork. 2. Add the Greek yogurt, chopped green onions, Dijon mustard, salt, and pepper. Mix well. 3. Toast the slices of whole wheat bread. 4. Spread the egg salad mixture evenly on one slice of bread. 5. Top with the other slice of bread. 6. Cut the sandwich diagonally into two halves. 7. Serve and enjoy!
