Steps

1. Preheat the air fryer to 375°F (190°C). 2. In a bowl, combine zucchini, eggplant, bell peppers, cherry tomatoes, and garlic. 3. Drizzle olive oil over the vegetables and sprinkle thyme, oregano, salt, and pepper. 4. Toss everything gently to coat evenly. 5. Place the vegetable mixture in the air fryer basket in a single layer. 6. Air-fry for 12-15 minutes, shaking the basket halfway through to ensure even cooking. 7. Once vegetables are tender and slightly crispy on edges, remove from air fryer. 8. Garnish with fresh basil leaves and serve warm.
