Classic Kenyan Mandazi

Mandazi is a popular East African fried dough treat that is slightly sweet and spiced with cardamom. Perfect as a snack or breakfast accompaniment, it is crispy on the outside and soft on the inside.

Steps

1. In a mixing bowl, combine flour, sugar, cardamom, baking powder, and salt. 2. Add coconut milk, water, and melted butter. Mix until a soft dough forms. 3. Knead the dough on a floured surface for about 5 minutes until smooth. 4. Cover the dough and let it rest for 20 minutes. 5. Roll out the dough to about 1/4 inch thickness. Cut into triangles or desired shapes. 6. Heat oil in a deep pan over medium heat. 7. Fry the mandazi pieces until golden brown on both sides, about 2-3 minutes per side. 8. Remove and drain on paper towels. 9. Serve warm, optionally dusted with powdered sugar or enjoyed with tea.
