1. In a small bowl, mix gochujang, honey, soy sauce, and a pinch of salt and pepper to create the glaze. 2. Heat sesame oil in a pan over medium-high heat. 3. Season the chicken breast with salt and pepper, then add it to the pan. Cook for about 5 minutes on each side, or until cooked through. 4. Brush the gochujang glaze over the chicken during the last couple of minutes of cooking. 5. Remove the chicken from the pan and let it rest for a minute before slicing. 6. In the same pan, stir-fry the mixed vegetables for about 3-4 minutes until tender. 7. Serve the sliced chicken over a bed of rice, topped with stir-fried vegetables and a sprinkle of black sesame seeds.
