Steps
1. Begin by slicing the bitter gourd in half lengthwise and scooping out the seeds with a spoon.
2. In a skillet, heat the olive oil over medium heat and add the minced garlic. Sauté until fragrant.
3. Add the finely chopped mushrooms and cook until they are soft and any liquid has evaporated.
4. Remove from heat and mix in the crumbled feta cheese, salt, and pepper.
5. Stuff the mushroom and feta mixture into the hollowed-out bitter gourd halves.
6. Place the stuffed gourd halves on a baking tray and bake in a preheated oven at 180°C (350°F) for 20 minutes.
7. Once done, remove from the oven, garnish with fresh parsley, and serve warm.
