Steps
1. Rinse the quinoa under cold water in a fine-mesh sieve.
2. In a small pot, combine the quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the quinoa is fluffy and water is absorbed.
3. In a large bowl, combine the cooked quinoa, lentils, diced cucumber, cherry tomatoes, and parsley.
4. Drizzle the lemon juice over the mixture and toss gently to combine.
5. Season with salt if desired and serve immediately.
