
Steps
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the frozen cauliflower and peas. Microwave for 2-3 minutes until thawed, then drain any excess moisture.
- Add aquafaba, chickpea flour, garlic powder, onion powder, salt, and pepper to the bowl. Mix until well combined.
- Shape the mixture into small fritters and place them on the prepared baking sheet.
- Brush the tops lightly with olive oil.
- Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
- Remove from the oven and let cool slightly. Garnish with fresh herbs if desired before serving.
