1. Cut the pork belly into 1-inch cubes. 2. In a pot, heat a bit of oil and add the pork belly, frying until slightly browned. 3. Add ginger, garlic, and sugar, stirring until the sugar melts and caramelizes. 4. Pour in both soy sauces and water, then add the star anise. 5. Bring to a boil, then reduce to a simmer, covering the pot. 6. Cook for 30 minutes, stirring occasionally, until the pork is tender and the sauce thickens. 7. Serve hot, garnished with chopped green onion.
