Steps
1. Preheat your oven to 350°F (175°C) and lightly grease a small oven-safe dish with butter or oil.
2. Slice the leftover churros into bite-sized pieces and place them evenly in the dish.
3. In a bowl, whisk together the egg, milk, vanilla extract, brown sugar, and ground cinnamon until well combined.
4. Pour the custard mixture evenly over the churro pieces, pressing down gently to soak.
5. Let it sit for 5 minutes to absorb the custard.
6. Bake in the preheated oven for 15-20 minutes, or until the custard is set and the top is golden brown.
7. Remove from oven and let cool slightly.
8. Dust with powdered sugar and drizzle with maple syrup before serving, if desired.
