Steps
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large bowl, combine the cauliflower florets and microwave for 3-4 minutes until slightly tender.
3. Let the cauliflower cool slightly, then chop it into smaller pieces.
4. In a mixing bowl, combine the chopped cauliflower, cheddar cheese, Parmesan cheese, egg, garlic powder, onion powder, paprika, salt, and pepper. Mix until well combined.
5. Using your hands, form small bite-sized balls or patties with the mixture and place them on the prepared baking sheet.
6. Bake in the preheated oven for 20-25 minutes or until they are golden brown and crispy.
7. Remove from the oven and let cool for a few minutes. Garnish with fresh parsley if desired and serve warm.
