Steps
1. In a saucepan, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks.
2. Add the diced potato and sliced carrot to the pan. Stir to combine and cook for about 5 minutes until the veggies start to soften.
3. Rinse the rice under cold water. Add it to the pan along with 1 cup of water. Season with salt, pepper, and any herbs you like.
4. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes until the rice is cooked and water is absorbed.
5. Fluff with a fork and serve hot, garnished with fresh herbs if desired.
