Steps
1. Preheat oven to 350°F (175°C). Grease and line a small round cake pan (6-inch).
2. In a bowl, whisk the egg and sugar until light and fluffy.
3. Sift together flour and baking powder; gently fold into egg mixture.
4. Add melted butter and milk, mix lightly until smooth.
5. Pour batter into the pan and bake for 15-18 minutes or until a toothpick comes out clean.
6. Let the cake cool completely.
7. Whip heavy cream with vanilla extract until soft peaks form.
8. Beat cream cheese until smooth, then fold into whipped cream gently.
9. Slice cake horizontally to create two layers.
10. Spread half the cream filling on the bottom layer and scatter sliced strawberries on top.
11. Place the second cake layer on top and frost the whole cake with remaining cream filling.
12. Decorate with whole strawberries on top, dust with powdered sugar.
13. Use edible gel or melted white chocolate in a piping bag to carefully write 'Happy Mother’s Day' on the cake surface.
14. Garnish with fresh mint leaves if desired. Refrigerate for at least 30 minutes before serving.
