Mediterranean Stuffed Mini Peppers

Steps

1. Preheat the oven to 375°F (190°C). Cut the tops off the mini peppers and remove the seeds. 2. In a bowl, mix the feta cheese, olives, herbs, salt, and pepper. Stuff the mini peppers with this mixture. 3. Place the stuffed mini peppers on a baking sheet, drizzle with olive oil, and bake for 20-25 minutes until the peppers are tender. 4. Serve hot and enjoy!
