Steps
1. Preheat oven to 180°C (350°F).
2. Wash and halve the mini peppers lengthwise, removing seeds.
3. In a bowl, mix goat cheese, chopped parsley, lemon zest, garlic powder, salt, and pepper.
4. Spoon the cheese mixture into each pepper half.
5. Place stuffed peppers on a baking tray and drizzle with olive oil.
6. Bake for 10-12 minutes until peppers are tender and cheese is slightly golden.
7. Serve warm as a delightful appetizer.
