Steps

1. Wash the mini peppers and slice them in half lengthwise, removing seeds. 2. In a small bowl, crumble the feta cheese. 3. Add chopped olives, sun-dried tomatoes, parsley, mint, lemon juice, and olive oil to the feta. 4. Mix gently until all ingredients are combined. 5. Season with freshly ground black pepper to taste. 6. Spoon the feta mixture evenly into each pepper half. 7. Arrange the stuffed peppers on a serving plate and serve chilled or at room temperature.
