Steps
1. Preheat the oven to 180°C (350°F).
2. Slice the tops off the mini bell peppers and remove the seeds.
3. In a small bowl, mix the goat cheese, chives, parsley, lemon zest, salt, and pepper until well combined.
4. Stuff each mini bell pepper with the goat cheese mixture.
5. Place the stuffed peppers on a baking sheet and drizzle with olive oil.
6. Bake for 12-15 minutes until the peppers are tender and the cheese is slightly golden.
7. Serve warm or at room temperature.
