
Steps
- Cut the potatoes into thin discs.
- Heat the oil in a pan over a medium heat.
- Add the potatoes to the pan and fry until golden and cooked through.
- Using a slotted spoon, remove the potato discs from the pan and place on a plate lined with paper towels.
- Return the pan to the heat and add the onions and fry until softened.
- Add the tomatoes, corn, salt and pepper and fry for a few minutes.
- Place the potato discs onto a baking tray and top with the onion and tomato mixture.
- Sprinkle with cheese and bake in preheated oven at 350F (180C) for 8 to 10 minutes or until cheese is melted and bubbling.
- Serve warm.

- 1/4 cup diced onions
- 1/4 cup diced tomatoes
- 1/4 cup grated cheese
- 1/4 cup corn
- Salt and pepper to taste
- 2 tablespoons oil for frying
