Fried Potato Discs with Cheese

Steps

1. Cut the potatoes into thin discs. 2. Heat the oil in a pan over a medium heat. 3. Add the potatoes to the pan and fry until golden and cooked through. 4. Using a slotted spoon, remove the potato discs from the pan and place on a plate lined with paper towels. 5. Return the pan to the heat and add the onions and fry until softened. 6. Add the tomatoes, corn, salt and pepper and fry for a few minutes. 7. Place the potato discs onto a baking tray and top with the onion and tomato mixture. 8. Sprinkle with cheese and bake in preheated oven at 350F (180C) for 8 to 10 minutes or until cheese is melted and bubbling. 9. Serve warm.
