Spicy Indian Vegetable Rice

A healthy and flavorful appetizer featuring a combination of onions, peppers, potatoes, and tomatoes cooked with aromatic Indian spices and served over a bed of fluffy rice.

Steps

1. Finely chop the onion, bell pepper, potato, and tomato. 2. Heat oil in a pan over medium heat and add cumin seeds. Allow them to splutter. 3. Add the chopped onion and sauté until translucent. 4. Add the bell pepper and potato. Cook until they are slightly tender. 5. Add the turmeric powder, red chili powder, and salt. Mix well. 6. Add the chopped tomato and cook until it softens. 7. Add the cooked rice to the pan and mix everything together. 8. Cook for a couple of minutes until the flavors blend well. 9. Garnish with fresh cilantro and serve hot.
