Steps

1. Toast the bread slice lightly until crisp. 2. Using a rolling pin, flatten the bread further to create a thin sheet. 3. Spread the low-fat Japanese mayo or plain yogurt evenly on the bread. 4. Place the nori sheet on top if using. 5. Spread the grated carrot and corn kernels evenly over the bread. 6. Peel and slice the banana into thin strips and arrange on top of the veggies. 7. Carefully roll the bread slice tightly into a sushi roll. 8. Slice the roll into 4-5 bite-sized pieces. 9. Sprinkle with toasted sesame seeds. 10. Serve with a small dish of soy sauce for dipping if desired.
