Steps
1. Wash and dry the mini bell peppers. Slice each pepper in half lengthwise and remove the seeds.
2. In a small bowl, combine goat cheese, chives, parsley, lemon zest, salt, and pepper.
3. Fill each pepper half with the goat cheese mixture.
4. Heat olive oil in a pan over medium heat and lightly sauté the stuffed peppers for 2 minutes, just to warm them.
5. Serve immediately as a fresh, colorful appetizer.
