Tuna Stuffed Sweet Potato

This savory and healthy dish is a great dinner for one. It features flaky, canned Tuna as the main protein, and is balanced out by a layer of creamy and flavorful yogurt topping.

Steps

1. Preheat oven to 400 degrees. Wash and scrub the sweet potato, then pierce it a few times with a fork. Place in oven and bake for 45 minutes, or until sweet potato is tender, flipping halfway through. 2. Meanwhile, heat olive oil in a small skillet over medium heat. Add onion, bell pepper, garlic powder, salt, and pepper. Saute until onion and bell pepper begin to soften, about 3-4 minutes. 3. Add tuna to pan and break apart with a spatula, stirring to combine. Cook for 5 more minutes until tuna is cooked through. 4. Once sweet potato is cooked, remove from oven and cut in half lengthwise. Scoop out some of the flesh and add it to the tuna mixture. Stir to combine. 5. Add tuna mixture to the sweet potato halves and top with greek yogurt. Enjoy!
