Steps
1. Preheat the oven to 400°F (200°C).
2. In a small bowl, mix honey, soy sauce, and minced garlic.
3. Season the chicken thigh with salt and pepper.
4. Heat olive oil in an oven-safe skillet over medium-high heat.
5. Sear the chicken thigh skin-side down until golden brown, about 5 minutes.
6. Flip the chicken and brush the honey mixture over the top.
7. Add fresh thyme or rosemary if using.
8. Transfer the skillet to the oven and roast for 15-20 minutes, or until the chicken is cooked through.
9. Remove from oven and let rest for 5 minutes before serving.
