Herb-Crusted Lamb Chops with Garlic Mashed Potatoes

Steps

1. Preheat oven to 200°C (400°F). 2. In a small bowl, mix minced garlic, rosemary, thyme, salt, and pepper. 3. Rub the lamb chop with olive oil, then coat it evenly with the herb mixture. 4. Heat an oven-safe skillet over medium-high heat and sear the lamb chop for 2 minutes on each side until browned. 5. Transfer the skillet to the oven and roast the lamb for 8-10 minutes for medium-rare. 6. Meanwhile, boil the potatoes in salted water until tender, about 15 minutes. 7. Drain the potatoes and mash with milk, butter, and salt until smooth and creamy. 8. Remove lamb from oven and let rest for 5 minutes. 9. Plate the lamb chop with a serving of mashed potatoes. Garnish with fresh parsley and serve hot.
