Cheesy Tomato Crostini

With an irresistible cheesy topping, this classic appetizer is sure to please everyone, vegetarian or not!

1. Preheat oven to 375°F. 2. In a large bowl, combine diced garlic, minced ginger, mustard, diced onions, and diced tomatoes. 3. Place the baguette slices on a baking sheet and top with mixture from bowl. 4. Bake for 8-10 minutes. 5. Remove from oven and top with grated cheddar cheese. 6. Return to oven and bake for 5-10 minutes until cheese melts. 7. Top with minced parsley and drizzle with olive oil. 8. Serve warm.
