Steps
1. Rinse the octopus under cold water and pat dry.
2. Bring a pot of salted water to a boil. Add the octopus and simmer for 45 minutes until tender.
3. Remove the octopus and let it cool slightly. Cut into manageable pieces.
4. In a bowl, mix olive oil, garlic, smoked paprika, lemon zest, lemon juice, salt, pepper, and chili flakes.
5. Toss the octopus pieces in the marinade and let sit for 15 minutes.
6. Preheat the grill or grill pan over medium-high heat.
7. Grill the octopus pieces for 3-4 minutes per side until slightly charred.
8. Remove from the grill, garnish with fresh parsley, and serve immediately.
