Steps
              1. Preheat oven to 375°F (190°C).
2. Cut the top off the bell pepper and remove seeds and membranes.
3. In a bowl, mix cooked quinoa, chickpeas, diced tomatoes, feta cheese, parsley, olive oil, oregano, salt, and pepper.
4. Stuff the mixture into the bell pepper and place it upright in a small baking dish.
5. Bake for 25-30 minutes until the pepper is tender and filling is heated through.
6. Remove from oven and let cool slightly before serving.
