Steps
1. In a large saucepan, bring 2 cups of water to a boil.
2. Add the whole-wheat couscous, reduce heat, and simmer for 8 minutes until tender.
3. Drain the couscous and let it cool to room temperature.
4. In a large bowl, combine the cooled couscous, chopped red peppers, scallions or chives, red onion, black olives, and walnuts.
5. Add minced garlic, dried oregano, and lemon juice to the bowl.
6. Crumble the feta cheese over the mixture.
7. Toss all ingredients gently to combine evenly.
8. Serve immediately or chill for 15 minutes for enhanced flavors.
