Steps
1. Place couscous in a bowl and pour boiling water over it. Cover and let it sit for 5 minutes until water is absorbed.
2. Fluff couscous with a fork and allow to cool slightly.
3. In a mixing bowl, combine couscous, cherry tomatoes, cucumber, and crumbled feta.
4. Drizzle olive oil and lemon juice over the salad.
5. Add chopped parsley, salt, and pepper.
6. Toss everything gently to combine.
7. Serve immediately or chill for 15 minutes before serving for a cooler salad.
