Steps
Rinse the quinoa under cold water until the water runs clear.
In a small saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low and cover. Cook for about 15 minutes or until water is absorbed.
Fluff the quinoa with a fork and let it cool slightly.
In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, parsley, mint, and feta cheese.
Drizzle with olive oil and lemon juice, then season with salt and pepper.
Toss gently to combine and serve immediately or chill for later.
