Steps
1. Rinse the quinoa under cold water.
2. In a small pot, combine quinoa and water, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed.
3. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
4. In a large bowl, mix the diced cucumber, red bell pepper, cherry tomatoes, red onion, feta cheese, and olives.
5. Add the cooked quinoa to the bowl.
6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the salad.
7. Toss everything together until well combined. Serve chilled or at room temperature.
