Steps
1. Rinse the quinoa under cold water.
2. In a small saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and cover. Simmer for 15 minutes or until quinoa is fluffy and liquid is absorbed.
3. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, bell pepper, and avocado.
4. In a separate small bowl, whisk together olive oil, lemon juice, parsley, basil, salt, and pepper.
5. Pour the dressing over the quinoa mixture and toss gently to combine.
6. Serve immediately or chill for a refreshing meal later.
