Steps
1. In a bowl, mix ground chicken, onion, garlic, cumin, coriander, paprika, salt, pepper, and parsley until well combined.
2. Form the mixture into small kofta-shaped patties or skewers.
3. Heat olive oil in a pan over medium heat and cook the koftas for about 4-5 minutes on each side until golden brown and cooked through.
4. Meanwhile, cook the basmati rice according to package instructions.
5. In a small bowl, combine diced cucumber and tomato with lemon juice, salt, and pepper to make a fresh salad.
6. Serve the kofta on a plate with rice, salad, and a drizzle of chili sauce topped with a dollop of yogurt.
