Steps
1. Soak the bulgur wheat in 1 cup of boiling water for 15 minutes.
2. Drain and transfer to a bowl.
3. Add the parsley, tomato, cucumber and mix.
4. In a small bowl, mix together the olive oil, lemon juice and salt and pepper.
5. Pour the dressing over the bulgur wheat and vegetables and mix until combined.
6. Serve chilled.
