Chickpea Flour Pizza Puffs

Deliciously fluffy pizza puffs made with chickpea flour and cornstarch, baked in a muffin tin for a fun twist on traditional pizza. Perfect for a savory snack or appetizer!

Preheat your oven to 375°F (190°C) and grease a muffin tin with olive oil. In a mixing bowl, combine chickpea flour, cornstarch, instant yeast, salt, garlic powder, and Italian seasoning. Gradually add warm water to the dry ingredients, stirring until a smooth batter forms. Spoon a small amount of the batter into each muffin tin cup, filling about 1/3 full. Add a teaspoon of pizza sauce in the center of each cup, then top with shredded mozzarella cheese. Cover the cheese with more batter until the cups are about 2/3 full. Bake in the preheated oven for 20-25 minutes or until the tops are golden brown and puffed. Remove from the oven and let cool slightly before serving.
