Steps
1. Using a spiralizer, create noodles from the zucchini. If you don't have a spiralizer, you can use a vegetable peeler to make thin strips.
2. In a food processor, combine the basil leaves, lemon juice, olive oil, garlic, salt, and pepper. Blend until smooth.
3. If using, add pine nuts to the pesto and pulse a few times to combine.
4. In a bowl, toss the zucchini noodles with the pesto until evenly coated.
5. Serve chilled, garnished with Parmesan cheese if desired.
