Steps
1. In a pan, heat the vegetable oil over medium heat. Add the minced garlic and sauté until fragrant.
2. Add the pork belly slices and cook until they are golden and crispy.
3. Stir in the chopped tomato and cook until they start to soften, about 2-3 minutes.
4. Push the pork and tomato mixture to one side of the pan. Crack the eggs into the pan, scramble them gently, and mix with the pork and tomatoes once they are slightly set.
5. Add soy sauce, sesame oil, salt, and pepper to taste. Stir everything together until well combined.
6. Remove from heat and garnish with chopped green onions before serving.
