Steps
1. Heat the vegetable oil in a pan over medium heat.
2. Add the minced garlic and sauté until fragrant.
3. Add the pork belly slices and cook until browned and crispy, about 5-7 minutes.
4. Stir in the diced tomato and cook until softened, about 2-3 minutes.
5. Push the pork and tomato to the side of the pan, then crack the eggs into the empty space.
6. Scramble the eggs gently until cooked through, then mix everything together.
7. Add soy sauce, sesame oil, salt, and pepper to taste, stirring well to combine.
8. Serve hot, garnished with chopped green onions.
