1. Place the chicken leg or bones in a medium pot and add water. 2. Bring to a gentle boil, then reduce heat to simmer. 3. Skim off any foam that rises to the surface. 4. Add carrot, celery, onion, garlic, bay leaf, and peppercorns. 5. Simmer gently for 45 minutes to 1 hour, uncovered, to concentrate flavor. 6. Strain the broth through a fine sieve into a bowl. 7. Season with salt to taste. 8. Garnish with fresh parsley if desired and serve warm.
