- In a bowl, whisk together the egg, sour cream, and cream cheese until well combined.
- Heat a non-stick skillet over medium heat.
- Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are scrambled and creamy.
- Remove the egg mixture from the skillet and set aside.
- Place one carne tortilla in the skillet and top with the scrambled eggs.
- Add any optional ingredients on top of the eggs.
- Top with the second carne tortilla.
- Cook the quesadilla for a few minutes on each side until golden brown and crispy.
- Slice and serve hot.
