Creamy Egg and Cheese Breakfast Quesadillas

A delicious twist on classic quesadillas using eggs, sour cream, cream cheese, and carne tortillas.

Steps

  1. In a bowl, whisk together the egg, sour cream, and cream cheese until well combined.
  2. Heat a non-stick skillet over medium heat.
  3. Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are scrambled and creamy.
  4. Remove the egg mixture from the skillet and set aside.
  5. Place one carne tortilla in the skillet and top with the scrambled eggs.
  6. Add any optional ingredients on top of the eggs.
  7. Top with the second carne tortilla.
  8. Cook the quesadilla for a few minutes on each side until golden brown and crispy.
  9. Slice and serve hot.

  • 1 tablespoon sour cream
  • 1 tablespoon cream cheese
  • 2 small carne tortillas
  • Salt and pepper to taste
  • Optional: chopped vegetables, cooked bacon or sausage
