Steps
1. In a bowl, whisk together the egg, sour cream, and cream cheese until well combined.
2. Heat a non-stick skillet over medium heat.
3. Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are scrambled and creamy.
4. Remove the egg mixture from the skillet and set aside.
5. Place one carne tortilla in the skillet and top with the scrambled eggs.
6. Add any optional ingredients on top of the eggs.
7. Top with the second carne tortilla.
8. Cook the quesadilla for a few minutes on each side until golden brown and crispy.
9. Slice and serve hot.
