Steps
1. Toast the gluten-free bread slice until golden and crisp.
2. While the bread is toasting, mash the avocado in a bowl and season with salt and pepper.
3. Heat olive oil in a small pan over medium heat.
4. Crack the eggs into the pan and cook to your preference (sunny side up or over easy recommended).
5. Spread the mashed avocado evenly over the toasted bread.
6. Place the cooked eggs on top of the avocado.
7. Scatter the halved cherry tomatoes over the eggs.
8. Season with additional salt, pepper, and optional red pepper flakes or herbs.
