Steps

1. Preheat your oven to 425°F (220°C). 2. Wash and peel the potatoes, then cut them into bite-sized chunks. 3. In a bowl, toss the potato chunks with olive oil, minced garlic, chopped rosemary, salt, and pepper until evenly coated. 4. Spread the potatoes out in a single layer on a baking sheet lined with parchment paper. 5. Roast in the oven for 30-35 minutes, flipping halfway through, until golden and crispy on the outside. 6. Remove from oven, garnish with fresh parsley if desired, and serve hot.
