Steps
1. Turn on the Instant Pot and select the 'Sauté' mode.
2. Add the diced onion and minced garlic, sautéing until translucent.
3. Add the diced ham and cook for an additional 2-3 minutes.
4. Stir in the soaked pinto beans, crushed tomatoes, chicken stock, diced potato, chopped mini sweet peppers, cumin, paprika, salt, and pepper.
5. Close the lid and set the Instant Pot to 'Manual' mode for 30 minutes.
6. Once the cooking time is done, allow for a natural release of pressure for 10 minutes, then quick release any remaining pressure.
7. Stir well and adjust seasoning if needed before serving.
