
Steps
- Turn on the Instant Pot and select the 'Sauté' mode.
- Add the diced onion and minced garlic, sautéing until translucent.
- Add the diced ham and cook for an additional 2-3 minutes.
- Stir in the soaked pinto beans, crushed tomatoes, chicken stock, diced potato, chopped mini sweet peppers, cumin, paprika, salt, and pepper.
- Close the lid and set the Instant Pot to 'Manual' mode for 30 minutes.
- Once the cooking time is done, allow for a natural release of pressure for 10 minutes, then quick release any remaining pressure.
- Stir well and adjust seasoning if needed before serving.
