Herb and Apple Stuffed Cornish Hen

Steps

1. Preheat the oven to 375°F (190°C). 2. In a small bowl, combine breadcrumbs, diced apple, onion, garlic, parsley, thyme, melted butter, salt, and pepper. 3. Rinse and pat dry the Cornish hen. Gently loosen the skin over the breast. 4. Stuff the breadcrumb mixture inside the cavity and under the skin of the hen. 5. Rub the outside of the hen with olive oil, and season with salt and pepper. 6. Place the hen breast side up in a roasting pan. 7. Roast in the preheated oven for 50-60 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown. 8. Let rest for 5 minutes before serving.
