Herb and Barberry Egg Frittata

Steps

1. Rinse the barberries under cold water and soak them briefly to remove excess tartness. 2. In a bowl, beat the eggs until smooth. 3. Add the chopped herbs, soaked barberries, turmeric, cumin, salt, and pepper to the eggs and mix well. 4. Heat olive oil in a small non-stick pan over medium heat. 5. Pour the egg mixture into the pan and cook on medium-low heat for about 5-7 minutes until the edges set. 6. Carefully flip the frittata or place the pan under a broiler for 2-3 minutes to cook the top. 7. Once fully cooked and golden, remove from heat and serve warm.
