Steps
1. In a bowl, combine the ground beef, grated onion, turmeric, cumin, black pepper, salt, and sumac if using.
2. Mix thoroughly with your hands until the mixture is well combined and slightly sticky.
3. Divide the mixture into one portion and shape it around a skewer into a long, flat kebab.
4. Preheat a grill or grill pan over medium-high heat.
5. Brush the kebab with olive oil or melted butter to prevent sticking.
6. Grill the kebab for 4-5 minutes on each side or until fully cooked and browned.
7. Remove from grill and let rest for a minute before serving.
8. Serve with saffron rice, flatbread, and grilled tomatoes or fresh herbs.
