Steps
1. Preheat your oven to 400°F (200°C).
2. In a small bowl, mix together garlic powder, onion powder, thyme, rosemary, paprika, salt, and pepper.
3. Pat the chicken thighs dry with paper towels. Rub the olive oil all over the chicken, then coat with the herb mixture, ensuring an even coverage.
4. Place the chicken thighs skin side up on a baking sheet.
5. Roast in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is crispy and golden brown.
6. Remove from the oven and let rest for 5 minutes before serving. Garnish with fresh parsley.
