Japanese Chicken Curry

Steps

1. Heat the vegetable oil in a saucepan over medium heat. 2. Add the sliced onion and sauté until translucent. 3. Add the diced chicken and cook until browned on all sides. 4. Stir in the carrot and potato and cook for another 2-3 minutes. 5. Sprinkle the curry powder over the mixture and stir well to coat. 6. Pour in the water and soy sauce, then bring to a boil. 7. Reduce the heat and let it simmer for about 15-20 minutes, or until the vegetables are tender and the sauce has thickened. 8. Season with salt to taste. 9. Serve the curry hot over cooked rice, garnished with sliced green onions if desired.
