Steps
1. In a bowl, whisk together olive oil, lemon juice, minced garlic, rosemary, thyme, salt, and pepper.
2. Add the chicken breast to the marinade, ensuring it is well-coated. Cover and refrigerate for at least 30 minutes.
3. Preheat the grill to medium-high heat.
4. While the chicken marinates, prepare the vegetables by tossing them with balsamic vinegar, salt, and pepper.
5. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear.
6. During the last 5 minutes of grilling, add the mixed vegetables to the grill, cooking until tender and slightly charred.
7. Remove chicken and vegetables from the grill, let rest for a few minutes, then serve hot.
